- 1Marinate the chicken (optional) - If you have time, marinate the chicken in a bowl with one tablespoon of soy sauce and one tablespoon of rice vinegar for 10-15 minutes for extra flavor.
- 2Cook the chicken - Heat 1 teaspoon vegetable oil and one teaspoon sesame oil in a large skillet or wok over medium-high heat. Once hot, add the chicken pieces. Season with salt and white pepper. Cook for 1 minute without moving them too much.
- 3Add flavorings - Add one tablespoon of butter, one tablespoon of soy sauce, and minced garlic to the pan. Sauté for another 2-3 minutes or until the chicken is cooked through and browned. If using, add one tablespoon of oyster sauce at this point and stir to combine.
- 4Remove chicken - Transfer the cooked chicken to a plate and cover with foil to keep warm.
- 5Season vegetables - Add 1/2 tablespoon butter, one tablespoon soy sauce, salt, and pepper to the vegetables. Sauté until fork-tender, about 2-3 minutes. Don't overcook them!
- 6Repeat with remaining vegetables - Set aside the cooked vegetables and repeat steps 5 and 6 with the remaining vegetables.
- 7Make the Yum Yum Sauce - While the vegetables cook (or while the chicken marinates), whisk together all ingredients for the Yum Yum sauce in a small bowl. Add sriracha to taste for a spicier sauce.
- 8Serve - Plate your cooked chicken and vegetables. Drizzle with Yum Yum sauce and serve immediately with rice (steamed or fried) if desired.
