  • 250kg boneless chicken, boiled and shredded
  • 1 small onion, finely choppe
  • Half teaspoon ginger garlic paste
  • 1/2 black pepper
  • 1teaspoon cumin powder
  • 1/4 teaspoon chili powder (adjust to your spice preference)
  • 1/2 teaspoon gram masala
  • 1 teaspoon coriander powder
  • salt according to the test
  • 2 tablespoon cooking oil
  • For the Box Patties
  • 10 - 12 Sheets of Spring roll Pastry
  • 1 Cup shredded mozzarella cheese
  • Bread crumbs
  • 2 eggs

    Warm the oil in a pan on medium heat. Add chopped onions and sauté until translucent.

    Mix garlic and ginger paste, and cook for another minute until fragrant.

    Add boiled shredded chicken to the pan along with cumin powder, coriander powder, salt, red chili flex, and black pepper. Mix well and cook for 5-7 minutes until the chicken is coated with the spices and flavors are well combined. Remove from heat and let it cool.

    Once the chicken mixture has cooled down, it's Time to assemble the box patties. Place a samosa wrapper on a flat surface. Brush one edge with a beaten egg. Fold the opposite edge over the egg wash to create a rectangle. Brush the top edge with egg wash. Place another samosa wrapper perpendicularly on top, forming a cross. Brush the center section with egg wash.

    Spoon a large amount of chicken filling in the center of the wrapper cross. Top with shredded cheese. Fold the bottom and top ends of the wrapper near the center, then fold the sides in to create a closed box shape.

    Dip the assembled patty in the remaining beaten egg, then roll in breadcrumbs to coat. Warm the oil on medium heat. Fry the box patties for 2-3 minutes per side or until golden brown and crispy.

Tips

These box patties can be made ahead of time and frozen. After assembling, place them on a baking sheet lined with parchment paper and freeze until firm. Once frozen, transfer them to a freezer bag or container. When ready to eat, fry them directly from frozen, adding a few extra minutes to the cooking time.
