Fold the opposite edge over the egg wash to create a rectangle. Brush the top edge with egg wash. Place another samosa wrapper perpendicularly on top, forming a cross. Brush the center section with egg wash.
- 5Spoon a large amount of chicken filling in the center of the wrapper cross. Top with shredded cheese. Fold the bottom and top ends of the wrapper near the center, then fold the sides in to create a closed box shape.
- 6Dip the assembled patty in the remaining beaten egg, then roll in breadcrumbs to coat. Warm the oil on medium heat. Fry the box patties for 2-3 minutes per side or until golden brown and crispy.
Tips
These box patties can be made ahead of time and frozen. After assembling, place them on a baking sheet lined with parchment paper and freeze until firm. Once frozen, transfer them to a freezer bag or container. When ready to eat, fry them directly from frozen, adding a few extra minutes to the cooking time.
